Hand-picked from two sites - the home vineyard and little Wychwood. Chilled overnight then gentle press. Clear racked juice and light fluffy lees racked to french oak. Fermented with wild yeast in second and third fill barrels. Lees stirred weekly to build texture. Unfined with minimal filtration then matured in oak for 6 months.
Think freshly harvested beehive + honeydew melon, crisp green apple, sea spray. a bright minerality with creamy undertones and some exotic spices.
