From Marten Doebbie’s vineyard just outside of the Lobethal township, Adelaide Hills. 440m elevation, gentle eastern aspect, situated in a valley where rainfall is higher and colder air stays for longer than surrounding areas. This leads to great acid retention, which enables texture to be built into the wine.
Slow whole bunch pressing, slow & cool natural fermentation in 2/3 barrel & 1/3 stainless steel. 10 months of oak aging post on fine lees, 15% new oak.
