Hand harvest Chardonnay from the Burnside vineyard. Whole bunch pressed direct to seasoned French oak. Full natural fermentation & malo with battonage. Once malic dry & aged to perfection, it is simply transferred back to tank for dosage of Chardonnay juice then hand bottled wearing a beret. Nothing but grapes.
