Clase Azul - Guerrero Mezcal
Clase Azul's Guerrero Mezcal is crafted using the Papalote agave, a unique species native to the humid highlands of Guerrero in Mexico's south. Alternatively known as agave cupreata, it imparts a distinct character to the resulting mezcal, drawing influence from the region's coastal landscape and verdant forests.
Think grapefruit zest, freshly cut wood, rosemary and toasted peanuts, hints of butter and daisies on the nose, with seaweed, lemon juice, pepper, and light tobacco on the palate.
Notable is the fact that the agaves are milled by hand, rather than using a donkey and tahona or mechanical mill. The manual process is said to retain more of the plant's flavours while adding length and body to the distillate.
