Despite the age of the wine and time on lees, it’s powerfully fresh. Fine bubbles. Lemon Tart, shortbread and toffee apple. As it opens up, granny smith apple crumble.
Hand harvested in February 2019; the grapes were pressed directly and settled overnight before being racked to 225 and 300 litre barrels for fermentation. Élevaged for 24 months, the wine was bottled in March 2021 with secondary fermentation started with fermenting must from that harvest.
This disgorment spent 41 months on lees, was hand riddled and disgorged in October 2025, with a dosage of 3 g/L.
